Tomato and basil soup

To begin with, heat the oven to 200C
Wash the tomatoes and cut them and the onions into quarters and place them in a baking tray.
Sprinkle them with pepper and add a generous amount of olive oil
Place the baking tray into the oven and roast the tomatoes and onions for 40-45 minutes depending on the strength of your oven
Once the time is up, remove the baking tray from the oven and
process the tomatoes and onions with a manual food processor.
Once done, pour it in a saucepan and heat gently for 5-15 minutes. Add 300ml of boiling water into the soup and place a chicken stock cube into the soup, stir, add basil and turn off the heat till you feel it’s adequate
