Roast beef with Bramble Gin Liqueur

Ingredients:

1.8 kg of beef brisket2 large onions
2 cubes of chicken stock
5 tbsp plain flour
10 garlic gloves
10 ml vegetable oil
10 bay leaves
250 ml Boƫ Scottish Bramble Gin Liqueur
450 gr frozen dark sweet cherries
500 ml of hot water

Preparation:

Dry the beef, and cover in plain flour.

In a pot, to be put later on the oven, put some oil frying the beef briefly to seal it. Put it aside.

Add more oil, fry to soften the onions and the garlic.

Replace the beef, and add the bay leaves, the gin liqueur, the chicken stock and the water. Let it rest for 2 hours.

Put it in the oven for 2.5 hours.

Separate the beef, to be cut in thin layers.

Separate the cooking liquid from the vegetables and simmer it, adding to it the cherries so the sauce is created.
